Oatmeal & White Chocolate Cookies
Ingredients:
- 450 grams flour
- 2 teaspoons baking flour
- 2 teaspoons ground cinnamon
- 450 grams unsalted butter
- 450 grams brown sugar
- 180 grams granulated sugar
- 4 eggs
- 140 ml buttermilk
- 1 teaspoon salt
- 20 grams vanilla extract
- 450 grams oatmeal
- 220 grams walnuts, peeled and chopped
- 450 grams white chocolate chips
Method:
- Sift the flour, baking soda and cinnamon. Set aside.
- Cream the butter and sugars. Gradually add the eggs, then mix in the buttermilk, salt, vanilla extract and oats.
- Add the flour mixture, beating just until well combined.
- Stir in the chocolate chunks and nuts.
- Spread the batter in cookie size on a greased and floured sheet pan and bake at 190 C for about 45 minutes or until golden.
