Warm Apple, Raisin & Custard Strudel


  • 2 large Granny Smith apple, peeled, scored, finely sliced
  • Grated rind of 1 lime
  • 1/4 cup Rum-soaked raisins
  • 1/2 cup crumbled amaretti
  • 25 grams brown sugar
  • 60 grams brown bread crumbs
  • 40 grams custard filling puff pastry sheets, rolled out
  • 25 grams butter
  • 15 grams chopped almonds
  • Icing sugar for dusting
  • Custard sauce


  1. Pre-heat the oven. Lightly grease and flour-dust a baking sheet.
  2. Place the apples in a bowl, mix with the raisins, custard and amaretti. Add sugar.
  3. Lay out the puff pastry, brush with butter.
  4. Spread crumbled amaretti, chopped almonds and bread crumbs across.
  5. Line the apple filling on one side and roll the strudel up.
  6. Brush with butter.
  7. Bake golden-brown for 20 minutes. Cool down slightly, dust with icing sugar and slice into portions.
    Serve with custard sauce and ice cream.
